Home gardens and farmers’ markets are overflowing with fresh fruits and vegetables, a healthy part of Virginian’s diets, following the summer growing season. And many will want to can, freeze or preserve them for use throughout the year.

Virginia Cooperative Extension has helpful information to help people be sure the food they preserve is preserved safely. It can be found the Virginia Cooperative Extension website.

Eleanor Schlenker, professor of human nutrition, foods and exercise in the College of Agriculture and Life Sciences at Virginia Tech is also available to explain important tips, best practices and other helpful information. She can be reached at (540) 231-2450 or at schlenkr@vt.edu.
